Can someone tell me what vegetable plants are best for container gardening?

For them if you have hotspot try an artichoke or beans as the containers are bushes instead of big sunflowers with nasturtiums and cucumbers and spinach and cucumbers and onions.

We always grew tomatoes in a 5 gallon bucket (both cherry and regular)

For growing with very little root room of course if you prefer pots you prefer pots you can use his basic principles.
